CONFETTI COOKIES
decembrie 28, 2016Who can say no to a buttery, soft, vanilla flavored cookie? And sprinkles, lots of sprinkles :)
These colored and joyful cookies are perfect for kid’s parties or for Christmas. Easy to make with just a few ingredients, confetti cookies are my kid’s favorite cookies. A couple of Confetti Cookies and a glass of milk, that’s all they want.
Ingredients for Confetti Cookies:
- 125gr butter (soft)
- 2 eggs
- 150gr sugar
- 250gr all-purpose flour
- vanilla extract
- 1 teaspoon baking powder
- a pinch of salt
- rainbow sprinkles (150-170gr)
Instructions:
Using an electric mixer, mix together soft butter, sugar, eggs and vanilla extract until creamy.
Mix together flour, baking powder and a pinch of salt in a separate bowl.
Add flour to the butter mixture and mix to combine. Cover with plastic wrap and put in the fridge for 30 minutes – 1 hour (the butter needs time to chill).
After 30 minutes, preheat the oven at 180º C.
Scoop 1 tablespoon of dough and roll into a ball. Roll the ball through rainbow sprinkles to cover lightly.
Put the ball on a baking tray covered with parchment paper. Add flour to the butter mixture and mix to combine. Cover with plastic wrap and put in the fridge for 30 minutes – 1 hour (the butter needs time to chill).
After 30 minutes, preheat the oven at 180º C.
Scoop 1 tablespoon of dough and roll into a ball. Roll the ball through rainbow sprinkles to cover lightly.
Repeat with remaining dough. Leave about 2cm between cookies.
Bake confetti cookies for about 10 minutes (or until beginning to brown around the edges).
Let confetti cookies on the parchment paper for 5 minutes before transferring to cooling racks.
