BAKED POLENTA LAYERED WITH SAUSAGES, FETA CHEESE AND EGGS

Baked polenta layered with sausages and feta cheese and topped with eggs is a traditional Romanian dish. It’s an old Transylvanian recipe with a funny name: “Taci si inghite” that means “Shut up and eat”
It’s absolutely delicious and easy to make. I recommend you to be careful how you answer the question “what’s for dinner” :)




Ingredients for baked polenta layered with sausages, feta cheese and eggs.

- 200gr feta cheese
- 300gr smoked sausages
- 4 eggs
- salt
- 1 tablespoon vegetable oil
For polenta:
- 500gr cornmeal
- 2L water
- salt

How to make baked polenta layered with sausages, feta cheese and eggs.


Grate the feta cheese. Set aside.
Slice the sausages and fry them a little on both sides in a lightly oiled frying pan. Set aside.
In a heavy large saucepan pour 2l of water. Place over medium heat, add salt and gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens, stirring often. Remove from heat.
Butter a 24/24cm oven proof pan. Pour in half of the quantity of polenta. Sprinkle 2/3 of grated feta cheese.
Place the sausages. If you wish, keep some slices for the top.


Pour over the rest of polenta. With the back of a spoon make 4 holes, like a nest.
Sprinkle the rest of grated feta cheese and break the eggs into those holes. Sprinkle 1 tablespoon vegetable oil and salt.
Bake for 25 minutes at 180ºC or until the eggs are cooked through.
Serve layered baked polenta while is still hot.
