TUNA PASTA SALAD

iunie 21, 2017

This tuna pasta salad is a must try recipe. It's very tasty, nourishing, quick and easy to make.
I used a Tzatziki dressing made with pickles instead of cucumbers. This combination goes perfectly with tuna. Instead of Tzatziki, you can use mayonnaise, pickles and garlic.
You can serve this delicious tuna pasta salad garnished with fresh parsley, for lunch or for dinner or as an appetizer.

Ingredients for tuna pasta salad:

- 400gr pasta
- tuna shredded in oil (2 cans of 170gr)
- 100gr pitted green olives
- 100gr pitted black olives
- 150gr corn (canned)
- 1 red bellpepper
For Tzatziki:
- 400gr Greek yogurt
- 7 pickles
- 5-6 garlic cloves
- 1 bunch of fresh dill
- salt and pepper to taste

How to make tuna pasta salad

You have to prepare Tzatziki first because it's better to refrigerate it for at least 30 minutes after preparation.
Combine in a bowl diced pickles, crushed garlic and greek yogurt. Season with salt and pepper and add chopped fresh dill. Refrigerate for 30 minutes.

Fill a large pot with water. Add salt. Bring to a boil and add the pasta. Cook for 8-10 minutes (or as long as mentioned in the instructions from the package).
Drain the pasta and allow to cool.

Meanwhile prepare the other ingredients.
Drain the tuna but not completely. Set aside. Chop the bellpepper.
Place the pasta into a large bowl. Add the tuna. Add the corn, chopped bellpepper and olives.
Add the Tzatziki and mix well to combine.
You can refrigerate the tuna pasta salad for 30 minutes before serving. This will allow the flavors to combine.
Enjoy!
