Very tasty and flavored, this potato salad is my favorite. Use the below list of ingredients only for inspiration and add your favorite vegetables to this potato salad. Always add olives because they go perfectly with potatoes! :)
You can also add peas, beans, mushrooms, baby spinach or any other vegetables you like.
If you want to prepare a rich and nourishing potato salad you can add hard boiled eggs, chicken or ham.
You can serve this delicious potato salad as a side dish. It goes very well with grilled meat.

Ingredients for potato salad

- 1kg potatoes
- 200gr pitted olives
- 1 red bell pepper
- 1 bunch of green onions
- 1 cucumber
- 2 tomatoes
- 2 tablespoons of olive oil
- 2 tablespoons of vinegar (or lemon juice)
- 1 bunch of fresh parsley
- salt to taste

How to make potato salad

Wash the potatoes and place them into a large pot with water and salt. Cover with a lid, place the pot over medium heat and bring to a boil. Cook until the potatoes are tender when pierced with a fork.
Drain the potatoes and allow to cool.
Meanwhile prepare the other ingredients.
Chop the spring onions into rings. Place the onion rings into a large salad bowl.
Cut the cucumber into halves, lengthwise, then slice. Place over the onions. Sprinkle some salt and stir to combine.
Add the red bell pepper chopped into small pieces and the olives.
Peel the potatoes and cut them in quarters then slice them. Place the potatoes into the salad bowl.
Add sliced tomatoes, chopped parsley, 2 tablespoons of olive oil and 2 tablespoons of vinegar (or lemon juice). Stir to combine.
You can serve this delicious potato salad right away or you can refrigerate it for 30 minutes - 1 hour before serving.
